Ingredients

  • 4 medium courgettes, spiralized
  • 1 cup cherry tomatoes, halved
  • ½ cup Kalamata olives, pitted
  • ½ cup crumbled feta cheese
  • ¼ cup red onion, thinly sliced
  • ¼ cup fresh parsley, chopped
  • 2 tbsp extra virgin olive oil
  • 2 tbsp lemon juice
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the spiralized courgette, cherry tomatoes, olives, feta cheese, red onion, and parsley.

  2. In a small bowl, whisk together the olive oil, lemon juice, dried oregano, salt, and pepper to make the dressing.

  3. Pour the dressing over the salad and toss gently to coat.

  4. Serve the Greek courgetti salad chilled or at room temperature.
