How To Make Greek Courgetti Salad

Ingredients
- 4 medium courgettes, spiralized
- 1 cup cherry tomatoes, halved
- ½ cup Kalamata olives, pitted
- ½ cup crumbled feta cheese
- ¼ cup red onion, thinly sliced
- ¼ cup fresh parsley, chopped
- 2 tbsp extra virgin olive oil
- 2 tbsp lemon juice
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions

In a large bowl, combine the spiralized courgette, cherry tomatoes, olives, feta cheese, red onion, and parsley.

In a small bowl, whisk together the olive oil, lemon juice, dried oregano, salt, and pepper to make the dressing.

Pour the dressing over the salad and toss gently to coat.
