Dressing

  • 1/2 cup olive oil
  • 1/2 cup red wine vinegar
  • 1 ½ tsp garlic powder
  • 1 ½ tsp dried basil
  • 1 ½ tsp dried oregano
  • 3/4 tsp ground black pepper
  • 3/4 tsp white sugar

Pasta Salad

  • 2 ½ cups elbow macaroni, cooked
  • 3 cups mushrooms, fresh, sliced
  • 15 cherry tomatoes, halved
  • 1 cup red bell peppers, sliced
  • 3/4 cup feta cheese, crumbled
  • 1/2 cup green onions, chopped
  • 4 oz canned whole black olives
  • 3/4 cup pepperoni sausage, sliced, cut into strips

Instructions

  1. In a large bowl, whisk together the dressing ingredients.

  2. Add the pasta salad ingredients. Toss until evenly coated.

  3. Cover and chill for 2 hours or overnight before serving.
