How To Make One-pan Thai green salmon

Ingredients

  • 4 salmon fillets
  • 2 tbsp Thai green curry paste
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 zucchini, sliced
  • 1 cup snap peas
  • 1 can (14 oz) coconut milk
  • 2 tbsp fish sauce
  • Juice of 1 lime
  • Fresh cilantro, for garnish
  • Cooked jasmine rice, for serving

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. In a large bowl, mix together the Thai green curry paste, coconut milk, fish sauce, and lime juice.

  3. Place the salmon fillets in a baking dish and pour the curry mixture over them. Add the sliced bell peppers, zucchini, and snap peas.

  4. Bake in the preheated oven for 20-25 minutes, or until the salmon is cooked through and the vegetables are tender.

  5. Serve the salmon and vegetables over cooked jasmine rice. Garnish with fresh cilantro.
