How To Make Chicken Cashew Salad

Ingredients
- 2 boneless, skinless chicken breasts
- 1 cup of cashews
- 4 cups of mixed salad greens
- 1 cucumber, sliced
- 1 bell pepper, thinly sliced
- 1/2 red onion, thinly sliced
- 1/4 cup of cilantro, chopped
- 1/4 cup of mint leaves, chopped
- 1/4 cup of lime juice
- 2 tablespoons of soy sauce
- 1 tablespoon of honey
- 1 tablespoon of olive oil
- Salt and black pepper, to taste
Instructions

Preheat the oven to 375°F (190°C). Season the chicken breasts with salt and black pepper, then bake for 20 minutes or until cooked through. Let cool, then slice into strips.

In a small bowl, whisk together the lime juice, soy sauce, honey, and olive oil to make the dressing.

In a large bowl, combine the mixed salad greens, cucumber, bell pepper, red onion, cilantro, and mint leaves.

Add the sliced chicken and cashews to the bowl.

Pour the dressing over the salad and toss to coat evenly.
