Ingredients

  • 8 oz noodles
  • 2 cups cooked chicken, shredded
  • 1 cup cucumber, thinly sliced
  • 1 cup carrots, julienned
  • 1/2 cup red bell pepper, thinly sliced
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup green onions, thinly sliced
  • dressing:
  • 1/4 cup soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tbsp honey
  • 1 tsp grated ginger
  • 1 garlic clove, minced

Instructions

  1. Cook noodles according to package instructions. Drain and rinse with cold water. Set aside.

  2. In a large bowl, combine cooked chicken, cucumber, carrots, red bell pepper, cilantro, and green onions.

  3. In a separate small bowl, whisk together all dressing ingredients.

  4. Add the cooked noodles to the chicken and vegetable mixture. Pour the dressing over the top and toss gently to combine.

  5. Serve chilled and enjoy!
