How To Make Cold Chicken Noodle Salad

Ingredients
- 8 oz noodles
- 2 cups cooked chicken, shredded
- 1 cup cucumber, thinly sliced
- 1 cup carrots, julienned
- 1/2 cup red bell pepper, thinly sliced
- 1/4 cup fresh cilantro, chopped
- 1/4 cup green onions, thinly sliced
- dressing:
- 1/4 cup soy sauce
- 2 tbsp rice vinegar
- 1 tbsp sesame oil
- 1 tbsp honey
- 1 tsp grated ginger
- 1 garlic clove, minced
Instructions

Cook noodles according to package instructions. Drain and rinse with cold water. Set aside.

In a large bowl, combine cooked chicken, cucumber, carrots, red bell pepper, cilantro, and green onions.

In a separate small bowl, whisk together all dressing ingredients.

Add the cooked noodles to the chicken and vegetable mixture. Pour the dressing over the top and toss gently to combine.
