  • 2 cups cooked chicken, diced
  • 1/2 cup celery, finely chopped
  • 1/4 cup red onion, finely chopped
  • 1/4 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 lettuce leaves


  1. In a large bowl, combine the diced chicken, celery, and red onion.

  2. In a separate small bowl, mix together the mayonnaise, Dijon mustard, lemon juice, salt, and black pepper.

  3. Pour the dressing over the chicken mixture and toss until well coated.

  4. Place a lettuce leaf on each plate and spoon the chicken salad onto the lettuce.

  5. Serve chilled and enjoy!
