Ingredients
- 2 cups cooked chicken, diced
- 1/2 cup celery, finely chopped
- 1/4 cup red onion, finely chopped
- 1/4 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 lettuce leaves
Instructions

In a large bowl, combine the diced chicken, celery, and red onion.

In a separate small bowl, mix together the mayonnaise, Dijon mustard, lemon juice, salt, and black pepper.

Pour the dressing over the chicken mixture and toss until well coated.

Place a lettuce leaf on each plate and spoon the chicken salad onto the lettuce.
