How To Make Microwaved Crushed Creamy Celeriac

Ingredients
- 1 medium celeriac, peeled and cut into cubes
- 2 tablespoons butter
- 1/2 cup heavy cream
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions

Place the celeriac cubes in a microwave-safe dish and add a splash of water. Cover with a microwave-safe lid or microwave-safe plastic wrap.

Microwave on high for 6-8 minutes, or until the celeriac is tender.

Drain any excess water and transfer the celeriac to a separate bowl. Use a fork or potato masher to gently crush the celeriac.

In a small microwave-safe bowl, melt the butter in the microwave for about 30 seconds.

Pour the melted butter and heavy cream over the crushed celeriac. Season with salt and pepper, to taste. Stir well to combine.

Microwave the celeriac mixture for another 2-3 minutes, or until heated through.

Remove from the microwave and garnish with fresh chopped parsley. Serve hot.
