Ingredients

  • 1 tbsp vegetable oil
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 red bell pepper, sliced
  • 1 zucchini, sliced
  • 1 carrot, sliced
  • 1 cup broccoli florets
  • 1 cup snap peas
  • 3 tbsp red curry paste
  • 1 can (14 oz) coconut milk
  • 1 cup vegetable broth
  • 2 tbsp soy sauce
  • 1 tbsp brown sugar
  • 1 tbsp lime juice
  • Fresh cilantro, for garnish
  • Cooked rice, for serving

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the onion and garlic, and cook until softened.

  2. Add the red bell pepper, zucchini, carrot, broccoli, and snap peas to the pot. Cook for 5 minutes, or until the vegetables are slightly tender.

  3. Stir in the red curry paste and cook for another minute, until fragrant.

  4. Pour in the coconut milk, vegetable broth, soy sauce, brown sugar, and lime juice. Bring the mixture to a boil, then reduce the heat and simmer for 15 minutes, or until the vegetables are fully cooked and tender.

  5. Serve the curry over cooked rice, and garnish with fresh cilantro.
