How To Make Chickpea and Black Bean Salad

Save a lot of time with this chickpea and black bean salad, a hearty side dish made with lots of fresh veggies tossed in a homemade vinaigrette.




  • 2cansblack beans,drained and rinsed
  • 2canschickpeas,drained and rinsed
  • ½red onion,chopped
  • 20cherry tomatoes,halved
  • ½cupfresh parsley,chopped
  • ½cupfresh mint,chopped
  • ¼cupolive oil
  • ¼cupapple cider vinegar
  • ¼cuplemon juice
  • salt,to taste
  • pepper,to taste
  • feta cheese,crumbled, to taste


  1. In a large bowl, combine the chickpeas, black beans, red onion, cherry tomatoes, fresh parsley, and fresh mint.

  2. In a small bowl, mix together olive oil, vinegar, lemon juice, salt, and pepper.

  3. Pour over the salad and toss to coat. Top with crumbled feta cheese. Enjoy!
