How To Make Corn & Split Pea Chowder

Serves:

Ingredients

  • 1 cup dried split peas
  • 4 cups vegetable broth
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 2 carrots, peeled and diced
  • 2 stalks of celery, diced
  • 2 cups frozen corn
  • 1 bay leaf
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 1 cup milk
  • Chopped fresh parsley for garnish

Instructions

  1. Rinse the split peas and place them in a large pot with the vegetable broth. Bring to a boil, then reduce heat and simmer for 30 minutes.

  2. In a separate pan, heat some oil and sauté the onion, garlic, carrots, and celery until they start to soften.

  3. Add the sautéed vegetables to the pot with the split peas. Stir in the frozen corn, bay leaf, dried thyme, salt, and pepper. Simmer for another 30 minutes or until the split peas are tender.

  4. Remove the bay leaf and use an immersion blender to blend the soup to your desired consistency.

  5. Stir in the milk and cook for an additional 10 minutes.

  6. Serve hot, garnished with chopped fresh parsley.
