How To Make Grilled Peach Panzanella

Ingredients
- 4 ripe peaches, halved and pitted
- 4 slices of crusty bread, cut into cubes
- 2 cups of cherry tomatoes, halved
- 1/4 cup of red onion, thinly sliced
- 1/4 cup of fresh basil leaves, torn
- 1/4 cup of fresh mint leaves, torn
- 1/4 cup of extra-virgin olive oil
- 2 tablespoons of balsamic vinegar
- Salt and black pepper to taste
Instructions

Preheat grill to medium-high heat.

Brush the peach halves with olive oil and grill for about 2-3 minutes on each side until grill marks appear. Remove from grill and set aside.

Grill the bread cubes until crispy and golden brown, about 2 minutes per side. Remove from grill and set aside.

In a large bowl, combine the grilled peaches, cherry tomatoes, red onion, basil, and mint.

In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and black pepper.

Pour the dressing over the peach mixture and gently toss to combine.

Add the grilled bread cubes to the salad and toss again.
