How To Make Clementine & Honey Couscous

Ingredients
- 2 cups couscous
- 2 cups vegetable broth
- Zest and juice of 4 clementines
- 2 tbsp honey
- 1/4 cup chopped fresh parsley
- Salt and pepper to taste
Instructions

In a saucepan, bring the vegetable broth to a boil.

Add the couscous, cover, and remove from heat. Let it sit for 5 minutes.

Fluff the couscous with a fork and transfer it to a serving bowl.

In a small bowl, whisk together the clementine zest, juice, honey, chopped parsley, salt, and pepper.

Pour the dressing over the couscous and toss to combine.
