Ingredients

  • 2 cups couscous
  • 2 cups vegetable broth
  • Zest and juice of 4 clementines
  • 2 tbsp honey
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste

Instructions

  1. In a saucepan, bring the vegetable broth to a boil.

  2. Add the couscous, cover, and remove from heat. Let it sit for 5 minutes.

  3. Fluff the couscous with a fork and transfer it to a serving bowl.

  4. In a small bowl, whisk together the clementine zest, juice, honey, chopped parsley, salt, and pepper.

  5. Pour the dressing over the couscous and toss to combine.

  6. Serve the couscous warm or at room temperature.
