How To Make Croque Madame with Spinach Salad

Ingredients
- 8 slices of bread
- 8 slices of ham
- 4 slices of Swiss cheese
- 4 eggs
- 4 tbsp butter
- 2 cups fresh spinach
- 1 cup cherry tomatoes, halved
- 1/4 cup red onion, thinly sliced
- 1/4 cup feta cheese, crumbled
- 2 tbsp balsamic vinegar
- 2 tbsp olive oil
- Salt and pepper, to taste
Instructions

Preheat oven to 400°F (200°C).

Place 4 slices of bread on a baking sheet. Top each slice with a slice of ham and a slice of Swiss cheese.

Place remaining slices of bread on top to create sandwiches.

Spread butter on top of each sandwich.

Bake in the oven for 10-12 minutes, until bread is crispy and cheese is melted.

In the meantime, prepare the spinach salad. In a large bowl, combine spinach, cherry tomatoes, red onion, and feta cheese.

In a small bowl, whisk together balsamic vinegar, olive oil, salt, and pepper. Pour dressing over salad and toss to combine.

In a non-stick skillet, fry the eggs sunny-side-up.

Remove sandwiches from the oven and place a fried egg on top of each.
