How To Make Asparagus Mousse with Ham & Red Onion Salad

Ingredients
- 1 pound asparagus, trimmed and steamed
- 2 tablespoons gelatin
- 1/4 cup cold water
- 1 cup heavy cream
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 8 slices ham, thinly sliced
- 1 small red onion, thinly sliced
- 2 tablespoons red wine vinegar
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions

In a small bowl, sprinkle gelatin over cold water. Let it soften for 5 minutes.

In a blender, puree steamed asparagus until smooth. Set aside.

In a small saucepan, heat cream over medium heat until steaming. Stir in softened gelatin until fully dissolved.

Remove from heat and stir in asparagus puree, salt, and pepper. Mix until well combined.

Pour mixture into individual serving dishes or a large mold. Chill in the refrigerator for at least 4 hours, or until set.

In a large bowl, toss ham, red onion, red wine vinegar, olive oil, salt, and pepper. Let it marinate for 10 minutes.

Serve the chilled asparagus mousse with a generous scoop of ham and red onion salad on top. Enjoy!
