How To Make Cos, Asparagus & Red Onion Salad

Ingredients
- 1 bunch of asparagus, trimmed
- 1 red onion, thinly sliced
- 1 head of cos lettuce, washed and torn into bite-sized pieces
- 1/4 cup of olive oil
- 2 tablespoons of lemon juice
- Salt, to taste
- Pepper, to taste
Instructions

In a pot of boiling water, blanch the asparagus for 2-3 minutes until crisp-tender. Drain and immediately transfer to a bowl of ice water to stop the cooking process. Drain again and set aside.

In a large bowl, combine the cos lettuce, blanched asparagus, and sliced red onions.

In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.

Drizzle the dressing over the salad and toss gently to combine.
