Ingredients

  • 1 bunch of asparagus, trimmed
  • 1 red onion, thinly sliced
  • 1 head of cos lettuce, washed and torn into bite-sized pieces
  • 1/4 cup of olive oil
  • 2 tablespoons of lemon juice
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. In a pot of boiling water, blanch the asparagus for 2-3 minutes until crisp-tender. Drain and immediately transfer to a bowl of ice water to stop the cooking process. Drain again and set aside.

  2. In a large bowl, combine the cos lettuce, blanched asparagus, and sliced red onions.

  3. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.

  4. Drizzle the dressing over the salad and toss gently to combine.

  5. Serve immediately and enjoy!
