How To Make Lemony Tuna & Asparagus Salad

Ingredients
- 1 lb fresh asparagus, trimmed
- 2 (5 oz) cans of tuna, drained
- 1 lemon, juiced and zested
- 3 tbsp olive oil
- 1 clove garlic, minced
- 1 tsp Dijon mustard
- Salt and pepper, to taste
- 4 cups mixed salad greens
- 1/4 cup sliced red onion
- 1/4 cup chopped fresh parsley
Instructions

Bring a pot of salted water to a boil. Add the asparagus and cook for 2-3 minutes, until crisp-tender. Drain and immediately transfer to a bowl of ice water to cool. Drain and set aside.

In a large bowl, combine the tuna, lemon juice and zest, olive oil, minced garlic, Dijon mustard, salt, and pepper. Mix well to combine.

Add the cooked asparagus, mixed salad greens, red onion, and chopped parsley to the bowl with the tuna mixture. Toss gently to combine.
