Serves:

Ingredients

  • 2 courgettes, thinly sliced
  • 1 jalapeño pepper, seeds removed and sliced
  • 200g nacho chips
  • 150g feta cheese, crumbled
  • 1 tbsp olive oil
  • 1 tsp cumin powder
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • Fresh coriander, chopped (for garnish)

Instructions

  1. Preheat your oven to 180°C (350°F).

  2. In a large frying pan, heat the olive oil over medium heat.

  3. Add the courgette slices and jalapeño slices to the pan. Sauté for 5-7 minutes until they are tender.

  4. In a baking dish, arrange a single layer of nacho chips.

  5. Sprinkle half of the sautéed courgette and jalapeño mixture over the nachos.

  6. Crumble half of the feta cheese on top.

  7. Repeat the layers with the remaining ingredients.

  8. Sprinkle cumin powder, paprika, salt, and pepper evenly over the top.

  9. Bake in the preheated oven for 10 minutes, or until the cheese is melted and bubbly.

  10. Serve hot, garnished with freshly chopped coriander.
