Ingredients

  • 2 cups penne pasta
  • 2 Granny Smith apples, julienned
  • 1 cup shredded cabbage
  • 1/2 cup shredded carrots
  • 1/2 cup chopped walnuts, toasted
  • 1/4 cup chopped fresh parsley
  • 1/4 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • Salt and pepper to taste

Instructions

  1. Cook the penne pasta according to package instructions. Drain and rinse with cold water.

  2. In a large bowl, combine the cooked penne, julienned apples, shredded cabbage, shredded carrots, toasted walnuts, and fresh parsley.

  3. In a small bowl, whisk together the mayonnaise, apple cider vinegar, honey, salt, and pepper until well combined.

  4. Pour the dressing over the pasta mixture and toss until everything is evenly coated.

  5. Serve immediately or refrigerate for at least 1 hour to allow the flavors to blend together.

  6. Garnish with additional chopped walnuts and parsley, if desired.
