Ingredients

  • 1 cup shredded carrots
  • 1 cup shredded beets
  • 1 cup shredded red cabbage
  • 1 cup shredded apples
  • 1/2 cup chopped walnuts
  • 1/4 cup olive oil
  • 2 tbsp apple cider vinegar
  • 1 tbsp honey
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the shredded carrots, beets, red cabbage, and apples.

  2. In a small bowl, whisk together the olive oil, apple cider vinegar, honey, salt, and pepper.

  3. Pour the dressing over the slaw and toss to coat.

  4. Add the chopped walnuts and toss again.

  5. Serve chilled.
