Ingredients
- 1 whole chicken (about 4 pounds)
- 2 tablespoons olive oil
- 2 teaspoons salt
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- ½ teaspoon black pepper
- 1 lemon, quartered
- 4 garlic cloves, smashed
Instructions

Preheat the oven to 425°F (220°C).

Remove the giblets from the chicken cavity and pat the chicken dry with paper towels.

Rub olive oil all over the chicken and season with salt, garlic powder, paprika, and black pepper.

Stuff the cavity of the chicken with lemon quarters and smashed garlic cloves.

Place the chicken on a roasting rack in a roasting pan, breast side up.

Roast the chicken in the preheated oven for 1 hour 30 minutes, or until the internal temperature reaches 165°F (75°C) when measured with a meat thermometer inserted into the thickest part of the thigh.

Remove the chicken from the oven and let it rest for about 10 minutes before carving.
