How To Make Roasted Sirloin of Beef with Salsa Verde

Ingredients
- 2 lbs sirloin beef roast
- 2 tbsp olive oil
- Salt and black pepper to taste
- 1 cup fresh parsley leaves
- 1/4 cup fresh basil leaves
- 2 cloves garlic
- 1 tbsp capers
- 2 anchovy fillets
- 1/2 tsp Dijon mustard
- Juice of 1/2 lemon
- 1/4 cup extra virgin olive oil

Preheat the oven to 375°F.

Rub the beef roast with olive oil and season with salt and pepper. Place it on a roasting pan.

Roast the beef in the preheated oven for about 1 hour for medium-rare doneness. Adjust cooking time according to your preferred level of doneness.

Meanwhile, prepare the salsa verde by combining parsley, basil, garlic, capers, anchovies, Dijon mustard, lemon juice, and extra virgin olive oil in a food processor. Pulse until well combined but still slightly chunky.

Once the beef is cooked to your liking, remove it from the oven and let it rest for 10 minutes before slicing.

Serve the sliced roasted beef with a dollop of salsa verde on top.
