Ingredients

  • 2 lb pork loin
  • 2 cups red seedless grapes
  • 1/4 cup Marsala wine
  • 1 tbsp crushed juniper berries
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).

  2. Season the pork loin with salt and pepper on all sides.

  3. Heat olive oil in a large oven-proof skillet over medium-high heat. Sear the pork loin on all sides until browned, about 4 minutes per side.

  4. Remove the pork from the skillet and set aside.

  5. In the same skillet, add the garlic and crushed juniper berries. Cook for 1 minute until fragrant.

  6. Add the grapes and Marsala wine to the skillet. Cook for 4-5 minutes, crushing the grapes slightly with a fork.

  7. Return the pork loin to the skillet, nestling it amongst the grapes.

  8. Transfer the skillet to the preheated oven and roast for 1 hour, or until the internal temperature of the pork reaches 145°F (63°C) on a meat thermometer.

  9. Remove the skillet from the oven and let the pork rest for 10 minutes before slicing.

  10. Serve the roast pork with the crushed grape, marsala, and juniper sauce.
