How To Make Roasties with Garlic & Chives

Ingredients

  • 4 large potatoes
  • 4 cloves of garlic, minced
  • 2 tablespoons of chopped fresh chives
  • 3 tablespoons of olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 425°F (220°C).

  2. Peel the potatoes and cut them into evenly-sized chunks.

  3. Place the potatoes in a pan of cold water with a pinch of salt and bring to a boil. Cook for 10 minutes, then drain.

  4. In a large roasting pan, combine the drained potatoes, minced garlic, chives, and olive oil. Toss to coat the potatoes evenly.

  5. Season with salt and pepper to taste.

  6. Roast the potatoes in the preheated oven for 30-35 minutes, or until golden brown and crispy.

  7. Serve hot as a delicious side dish.
