Ingredients

  • 1.5 lbs pork tenderloin, cut into 1-inch thick slices
  • 2 tablespoons olive oil
  • 1/4 cup maple syrup
  • 3 tablespoons soy sauce
  • 2 tablespoons apple cider vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon ground ginger
  • Salt and pepper, to taste
  • 2 apples, cored and thinly sliced
  • 2 tablespoons butter
  • 2 tablespoons brown sugar
  • 1/2 teaspoon cinnamon

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. In a small bowl, whisk together the maple syrup, soy sauce, apple cider vinegar, minced garlic, ground ginger, salt, and pepper.

  3. Heat the olive oil in a large oven-safe skillet over medium-high heat. Add the pork tenderloin slices and cook for 2-3 minutes on each side, until browned.

  4. Pour the maple syrup mixture over the pork slices in the skillet, coating them evenly. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the pork reaches an internal temperature of 145°F (63°C).

  5. While the pork is cooking, melt the butter in a separate skillet over medium heat. Add the sliced apples, brown sugar, and cinnamon. Cook for 8-10 minutes, stirring occasionally, until the apples are tender and caramelized.

  6. Remove the pork from the oven and let it rest for 5 minutes. Serve the sticky maple pork slices with the caramelized apples on top.
