Ingredients

  • 1 whole chicken (about 4 lbs)
  • 1 cup couscous
  • 1/4 cup pine nuts
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. Rinse the chicken inside and out, then pat dry with paper towels.

  3. In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, and cook until softened.

  4. Add the pine nuts and cook for an additional 2 minutes, stirring frequently.

  5. Remove the skillet from heat and stir in the couscous, dried thyme, dried rosemary, salt, and black pepper. Let the mixture cool slightly.

  6. Stuff the cavity of the chicken with the couscous and pine nut mixture, then tie the legs together with kitchen twine.

  7. Place the chicken on a roasting rack in a roasting pan. Brush the chicken with olive oil and sprinkle with additional salt and pepper if desired.

  8. Roast the chicken in the preheated oven for about 1 hour and 30 minutes, or until the internal temperature reaches 165°F (74°C) when measured with a meat thermometer inserted into the thickest part of the thigh.

  9. Remove the chicken from the oven and let it rest for about 10 minutes before carving.

  10. Serve the roast chicken with couscous and pine nut stuffing hot.
