How To Make Pulled BBQ Aubergine & Black Bean Burgers

Ingredients
- 1 large aubergine
- 1 can black beans, rinsed and drained
- 1/2 cup BBQ sauce
- 1/2 cup breadcrumbs
- 1/4 cup chopped red onion
- 2 cloves garlic, minced
- 1 tsp smoked paprika
- 1 tsp cumin
- 1/2 tsp salt
- 1/4 tsp black pepper
- 4 burger buns
Instructions

Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.

Slice the aubergine into thin rounds and place them on the prepared baking sheet. Bake for 15-20 minutes, or until tender.

In a large bowl, mash the black beans with a fork or potato masher until they are mostly smooth.

Add the cooked aubergine, BBQ sauce, breadcrumbs, red onion, garlic, smoked paprika, cumin, salt, and black pepper to the bowl. Mix until well combined.

Form the mixture into 4 patties and place them on the lined baking sheet. Bake for 15-20 minutes, flipping halfway through, until the burgers are firm and golden brown.

Serve the burgers on buns, topped with your favorite burger toppings.
