How To Make One-pot chicken with chorizo & new potatoes

Ingredients
- 4 bone-in chicken thighs
- 150g chorizo, sliced
- 500g new potatoes, halved
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 red bell pepper, sliced
- 1 tsp smoked paprika
- 1 tsp dried thyme
- 1 cup chicken broth
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions

In a large skillet or Dutch oven, heat some oil over medium-high heat. Season the chicken thighs with salt and pepper, then sear them until browned on both sides. Remove from the skillet and set aside.

In the same skillet, add the sliced chorizo and cook until crispy. Remove from the skillet and set aside.

Add the onion, garlic, and red bell pepper to the skillet and sauté until softened.

Add the halved new potatoes, smoked paprika, and dried thyme. Stir well to coat the potatoes with the spices.

Return the chicken thighs and chorizo to the skillet, nestling them among the potatoes and vegetables. Pour in the chicken broth.

Reduce the heat to low, cover the skillet, and simmer for about 30 minutes or until the chicken is cooked through and the potatoes are tender.

Garnish with chopped parsley before serving.
