  • 2 cans of butter beans, drained and rinsed

  • 1 cup vegetable broth
  • 1 tsp smoked paprika
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion and minced garlic. Cook until onion becomes translucent.

  2. Add butter beans, diced tomatoes, vegetable broth, smoked paprika, and dried thyme to the pot. Stir to combine.

  3. Bring the stew to a simmer and let it cook for about 30 minutes, stirring occasionally.

  4. Season with salt and pepper to taste.

  5. Serve the stew in bowls, garnished with fresh parsley.
