- 2 tbsp olive oil
- 1 onion, diced
- 3 cloves of garlic, minced
- 2 cans of butter beans, drained and rinsed
- 1 can of diced tomatoes
- 1 cup vegetable broth
- 1 tsp smoked paprika
- 1 tsp dried thyme
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions

Heat olive oil in a large pot over medium heat. Add diced onion and minced garlic. Cook until onion becomes translucent.
