Ingredients

  • 2 pounds sirloin tip roast
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 2 teaspoons dried rosemary
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. In a small bowl, mix together the olive oil, minced garlic, dried rosemary, dried thyme, salt, and black pepper.

  3. Pat the sirloin tip roast dry with paper towels.

  4. Rub the herb mixture all over the roast, coating it evenly.

  5. Place the roast on a rack in a roasting pan.

  6. Roast in the preheated oven for about 1 hour and 30 minutes, or until the internal temperature reaches 135°F (57°C) for medium-rare, or your desired doneness.

  7. Remove the roast from the oven and let it rest for 10 minutes before slicing.

  8. Slice the roast against the grain and serve.
