- 1 cup long-grain white rice
- 1 tablespoon vegetable oil
- 1/2 medium onion, finely chopped
- 2 cloves garlic, minced
- 1/2 teaspoon cumin
- 1/2 teaspoon chili powder
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1 3/4 cups chicken broth
- 1/4 cup tomato sauce
- 1/4 cup frozen peas (optional)
- 2 tablespoons chopped cilantro (optional)
- Lime wedges, for serving
Instructions

Rinse the rice under cold water until the water runs clear. Drain well.

Heat the vegetable oil in a large saucepan over medium heat.

Add the chopped onion and minced garlic to the saucepan and cook until onion is translucent.

Stir in the cumin, chili powder, paprika, and salt and cook for an additional minute.

Add the rice to the saucepan and stir until evenly coated with the spices.

Pour in the chicken broth and tomato sauce. Give everything a good stir.

Bring the mixture to a boil, then reduce heat to low and cover the saucepan with a tight-fitting lid.

Simmer for 20 minutes, or until the liquid is absorbed and the rice is tender.

Optional: Add frozen peas to the rice during the last 5 minutes of cooking, stirring to combine.

Remove from heat and let the rice sit, covered, for 5 minutes. Fluff with a fork.
