How To Make Spicy Mexican Chicken Casserole Recipe

A fiesta in your mouth! This casserole will make your taste buds dance with its spicy, cheesy, Mexican flavors.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 can (14 oz) black beans, drained and rinsed
  • 1 can (10 oz) diced tomatoes with green chilies, drained
  • 1 can (4 oz) diced green chilies, drained
  • 1/4 cup chopped cilantro
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp cayenne pepper
  • 2 cups cooked brown rice
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat oven to 375°F.

  2. In a large bowl, combine chicken, black beans, diced tomatoes with green chilies, diced green chilies, cilantro, cumin, chili powder, garlic powder, onion powder, and cayenne pepper.

  3. Layer cooked brown rice evenly over the bottom of a 9×13 inch baking dish.

  4. Top rice with chicken mixture.

  5. Sprinkle shredded cheddar cheese on top of chicken mixture.

  6. Bake in preheated oven for 35-40 minutes, until hot and bubbly.

  7. Let cool for a few minutes before serving.
