Dinners just got better with this saffron rice! This Indian-inspired dish combines basmati rice, plump raisins, and cinnamon for a savory bite.

Ingredients

  • cupsbasmati rice
  • cupswater
  • 1cinnamon stick
  • 5cloves
  • 2bay leaves
  • ¼tspsaffron threads,crumbled
  • 1tspsalt
  • 2tbspbutter
  • ¼cupcashews,chopped
  • ¼cupraisins

Instructions

  1. Rinse the rice until the water runs clear. Put the rice in a medium saucepan with the water, cinnamon stick, cloves, bay leaves, saffron, and salt.

  2. Bring to a boil, reduce the heat to low, and cook, covered, for 15 minutes.

  3. Remove from the heat and let sit for 10 minutes, without removing the lid. With a fork, gently stir in the butter, cashews, and raisins.

  4. Serve warm and enjoy.
