Ingredients

  • 1 lb carrots
  • 2 tbsp balsamic vinegar
  • 1 tbsp olive oil
  • 1 tbsp honey
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. Peel the carrots and cut them into long, thin strips.

  3. In a large bowl, whisk together the balsamic vinegar, olive oil, honey, salt, and pepper.

  4. Add the carrot strips to the bowl and toss until well coated.

  5. Transfer the carrots to a baking sheet, spreading them out in a single layer.

  6. Roast in the preheated oven for 25 minutes, or until the carrots are tender and caramelized.

  7. Remove from the oven and garnish with fresh parsley before serving.
