Ingredients

  • 4 cups cooked rice (preferably day-old)
  • 2 tablespoons vegetable oil
  • 1 tablespoon minced ginger
  • 3 cloves garlic, minced
  • 1 cup diced carrots
  • 1 cup diced bell peppers (any color)
  • 1 cup frozen peas
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 green onions, sliced
  • Salt and pepper, to taste

Instructions

  1. Heat vegetable oil in a large pan or wok over medium heat.

  2. Add minced ginger and garlic, and cook for 1-2 minutes until fragrant.

  3. Add diced carrots, bell peppers, and frozen peas to the pan. Cook until vegetables are tender, about 5 minutes.

  4. Push the vegetables to one side of the pan and add the cooked rice to the other side. Break up any clumps of rice with a spatula.

  5. Drizzle soy sauce and sesame oil over the rice, and stir to combine with the vegetables. Cook for an additional 2-3 minutes until everything is heated through.

  6. Season with salt and pepper to taste.

  7. Remove from heat and garnish with sliced green onions.

  8. Serve hot and enjoy!
