Ingredients

  • 1 tbsp olive oil
  • 1 lb sausage, casings removed
  • 1 fennel bulb, thinly sliced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 ½ cups Arborio rice
  • ½ cup white wine
  • 4 cups chicken or vegetable broth
  • ½ cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large saucepan, heat the olive oil over medium heat. Add the sausage and cook until browned, breaking it up with a wooden spoon.

  2. Add the fennel, onion, and garlic to the saucepan. Cook for 5 minutes, until the vegetables are softened.

  3. Stir in the Arborio rice and cook for 2 minutes, until the rice is lightly toasted.

  4. Pour in the white wine and cook, stirring constantly, until the wine has evaporated.

  5. Begin adding the broth, one ladleful at a time, stirring constantly until the liquid is absorbed before adding more. Continue this process for about 20-25 minutes, until the rice is cooked al dente.

  6. Stir in the grated Parmesan cheese and season with salt and pepper to taste.

  7. Serve the risotto hot, garnished with chopped parsley.
