Ingredients
- 2 cups long-grain white rice
- 2 tablespoons vegetable oil
- 1 onion, diced
- 1 red bell pepper, diced
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1 teaspoon chili powder
- 1 can (14 ounces) diced tomatoes
- 1 can (14 ounces) chicken broth
- Salt and pepper to taste
- Fresh cilantro, chopped (for garnish)
Instructions

Rinse the rice under cold water until the water runs clear. Drain and set aside.

In a large skillet, heat the vegetable oil over medium heat. Add the onion, red bell pepper, and garlic. Cook until the vegetables are soft and translucent.

Add the cumin, paprika, and chili powder to the skillet. Stir well to coat the vegetables.

Add the rice to the skillet and stir to combine with the vegetables and spices. Cook for 1-2 minutes, until the rice is lightly toasted.

Pour in the diced tomatoes and chicken broth. Stir everything together and bring to a boil.

Reduce the heat to low, cover the skillet, and simmer for 20 minutes, or until the rice is cooked and the liquid has been absorbed.

Remove from heat and let the rice rest, covered, for 5 minutes. Fluff the rice with a fork before serving.
