How To Make Spicy Spanish-Style Rice

Ingredients
- 2 cups of long-grain rice
- 4 cups of chicken or vegetable broth
- 1 onion, diced
- 2 bell peppers, diced
- 3 cloves of garlic, minced
- 1 jalapeno pepper, seeds removed and minced
- 1 can (14.5 oz) of diced tomatoes
- 1 tsp of paprika
- 1/2 tsp of cayenne pepper
- 1/2 tsp of dried oregano
- 1/2 tsp of salt
- 1/4 tsp of black pepper
- 2 tbsp of olive oil
- Fresh cilantro, chopped (for garnish)
Instructions

In a large skillet, heat the olive oil over medium heat. Add the diced onion, bell peppers, minced garlic, and jalapeno pepper. Cook for about 5 minutes until the vegetables are softened.

Add the rice to the skillet and stir well to coat it with the vegetable mixture. Cook for another 2 minutes.

Pour in the diced tomatoes (including the juice), chicken or vegetable broth, paprika, cayenne pepper, dried oregano, salt, and black pepper. Stir well to combine all the ingredients.

Bring the mixture to a boil, then reduce the heat to low. Cover the skillet and simmer for about 20-25 minutes, or until the rice is cooked and all the liquid is absorbed.

Once the rice is cooked, fluff it with a fork. Taste and adjust the seasoning if needed.

Serve the spicy Spanish-style rice hot, garnished with fresh cilantro.
