  • 14ozchicken broth,1 can
  • 15oztomatoes,with green chile peppers, diced, 1 can
  • 1tspsalt
  • 1cupbrown rice


  1. Bring chicken broth, tomatoes, and salt to a boil in a medium saucepan then add rice.

  2. Cover, reduce heat to medium-low, and simmer until rice is cooked and liquid is absorbed for about 1 hour. Stir before serving.
