A hearty and flavorful lasagna made with ground sausage and spinach.
Serves:
Ingredients
- 8 lasagna noodles
- 1 lb ground Italian sausage
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can diced tomatoes
- 1 can tomato sauce
- 1 tsp dried basil
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 cups fresh spinach, chopped
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
Instructions
-
Preheat the oven to 375°F.
-
Cook the lasagna noodles according to the package instructions. Drain and set aside.
-
In a large skillet, cook the sausage, onion, and garlic over medium heat until the sausage is browned and the onion is tender.
-
Add the diced tomatoes, tomato sauce, basil, oregano, salt, and pepper. Stir well and bring to a simmer. Reduce the heat to low and let simmer for 10 minutes.
-
Stir in the spinach and let cook for an additional 2-3 minutes until wilted.
-
In a separate bowl, mix together the ricotta cheese and 1/2 cup of the mozzarella cheese.
-
To assemble the lasagna, spread a thin layer of the sauce on the bottom of a 9×13 inch baking dish. Top with 4 lasagna noodles, the ricotta cheese mixture, and half of the remaining sauce. Repeat the layers with the remaining noodles, sauce, and mozzarella cheese.
-
Sprinkle the grated Parmesan cheese on top.
-
Cover the dish tightly with foil and bake for 30 minutes. Remove the foil and bake for an additional 10-15 minutes until the cheese is melted and bubbling.
-
Let cool for a few minutes before serving.
