Ingredients

  • 300g all-purpose flour
  • 3 large eggs
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 tablespoon tomato paste
  • 1 tablespoon spinach powder
  • water for boiling
  • salt for pasta water

Instructions

  1. In a large bowl, mix the all-purpose flour and salt. Create a well in the center.

  2. Crack the eggs into the well and add the olive oil. Mix with a fork until a dough forms.

  3. Knead the dough on a floured surface for about 5 minutes, until it becomes smooth and elastic.

  4. Divide the dough into three equal portions. Add tomato paste to one portion and spinach powder to another. Knead each portion until the colors are well incorporated.

  5. Roll out each portion into a thin sheet using a pasta machine or a rolling pin.

  6. With a sharp knife or a pizza cutter, cut the dough sheets into tagliatelle strips.

  7. Bring a large pot of salted water to a boil. Add the tagliatelle and cook for about 2-3 minutes, or until al dente.

  8. Drain the pasta and toss with your favorite sauce or serve with olive oil and grated Parmesan cheese.
