Ingredients

  • 8 oz tagliatelle pasta
  • 2 chicken breasts, boneless and skinless
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder
  • Salt and pepper, to taste
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh basil, chopped
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Cook the tagliatelle pasta according to package instructions. Drain and set aside.

  2. Preheat a grill or grill pan over medium-high heat.

  3. In a small bowl, combine the olive oil, dried oregano, garlic powder, salt, and pepper.

  4. Brush the chicken breasts with the oil mixture and grill for 6-8 minutes per side, or until cooked through. Let rest for a few minutes before slicing into thin strips.

  5. In a large skillet, heat a drizzle of olive oil over medium heat. Add the cherry tomatoes and cook until they start to blister, about 3-4 minutes.

  6. Add the cooked pasta and grilled chicken to the skillet with the tomatoes. Toss everything together until well combined.

  7. Remove from heat and sprinkle with fresh basil and Parmesan cheese.

  8. Serve hot and enjoy!
