How To Make Super-Veg Pasta

Ingredients

  • 8 ounces of whole wheat pasta
  • 2 tablespoons of olive oil
  • 2 cloves of garlic, minced
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 zucchini, thinly sliced
  • 1 cup of cherry tomatoes, halved
  • 1 cup of baby spinach
  • 1 teaspoon of dried basil
  • 1 teaspoon of dried oregano
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.

  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and cook until fragrant, about 1 minute.

  3. Add the sliced bell peppers and zucchini to the skillet. Cook for 5-6 minutes, until the vegetables are tender.

  4. Add the cherry tomatoes and baby spinach to the skillet. Cook for another 2-3 minutes, until the spinach wilts.

  5. Season the vegetables with dried basil, dried oregano, salt, and pepper. Stir well to combine.

  6. Add the cooked pasta to the skillet and toss until everything is well coated.

  7. Serve the super-veg pasta hot, topped with grated Parmesan cheese.
