How To Make Summer Pea Pasta

Ingredients

  • 8 oz pasta
  • 1 cup fresh or frozen peas
  • 1 lemon, zested and juiced
  • 2 cloves garlic, minced
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh basil
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions. In the last minute of cooking, add the peas to the boiling water. Drain and set aside.

  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and cook for 1-2 minutes until fragrant.

  3. Add the cooked pasta and peas to the skillet and toss to combine. Cook for an additional 2-3 minutes to heat through.

  4. Remove from heat and stir in the lemon zest, lemon juice, Parmesan cheese, and chopped basil. Season with salt and pepper to taste.

  5. Serve hot, garnished with additional Parmesan cheese and basil leaves if desired.
