Ingredients

  • 8 oz noodles of your choice
  • 1 cup snap peas, trimmed
  • 1 cup asparagus, trimmed and cut into 1-inch pieces
  • 1 small zucchini, sliced
  • 1 red bell pepper, sliced
  • 2 cloves garlic, minced
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 1 tbsp honey
  • 1 tsp grated ginger
  • Sesame seeds, for garnish

Instructions

  1. Cook the noodles according to package instructions until al dente. Drain and set aside.

  2. In a large skillet, heat sesame oil over medium heat. Add garlic and ginger and cook for 1 minute.

  3. Add snap peas, asparagus, zucchini, and bell pepper to the skillet. Cook for 3-4 minutes until veggies are crisp-tender.

  4. In a small bowl, whisk together soy sauce, rice vinegar, and honey. Pour the sauce over the vegetables and stir to combine.

  5. Add the cooked noodles to the skillet and toss to coat them in the sauce. Cook for an additional 2-3 minutes until everything is heated through.

  6. Serve the spring vegetable noodles hot, garnished with sesame seeds.
