How To Make Courgette & Tomato Linguine

Ingredients
- 8 ounces linguine
- 2 courgettes, thinly sliced
- 2 tablespoons olive oil
- 2 cloves of garlic, minced
- 1 pint cherry tomatoes, halved
- 1/4 teaspoon red pepper flakes
- Salt and pepper, to taste
- Fresh basil leaves, for garnish
- Grated Parmesan cheese, for serving
Instructions

Cook the linguine according to package instructions until al dente. Drain and set aside.

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes, and cook for 1 minute until fragrant.

Add the sliced courgettes to the skillet and cook for 4-5 minutes until they start to soften.

Stir in the cherry tomatoes and cook for another 3-4 minutes until they begin to release their juices.

Season with salt and pepper to taste.

Add the cooked linguine to the skillet and toss to coat in the sauce.

Serve the linguine with a sprinkle of grated Parmesan cheese and fresh basil leaves.
