How To Make Courgette & Lemon Linguine

Ingredients
- 8 ounces linguine
- 2 courgettes, thinly sliced
- 1 lemon, zested and juiced
- 2 tablespoons olive oil
- 2 cloves of garlic, minced
- 1/4 teaspoon red pepper flakes
- Salt and pepper to taste
- Grated Parmesan cheese for serving
- Fresh basil leaves for garnish
Instructions

Cook the linguine according to package instructions until al dente. Drain and set aside.

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes. Cook for 1-2 minutes until fragrant.

Add the courgette slices to the skillet and sauté for 4-5 minutes until tender.

Stir in the lemon zest and juice, and season with salt and pepper.

Add the cooked linguine to the skillet and toss well to combine.

Serve the linguine with grated Parmesan cheese and garnish with fresh basil leaves.
