Ingredients

  • 8 oz penne pasta
  • 2 tbsp olive oil
  • 1/4 cup chopped onion
  • 2 cloves garlic, minced
  • 1/4 cup vodka
  • 1 cup tomato sauce
  • 1/2 cup heavy cream
  • 1/4 cup grated parmesan cheese
  • Salt and pepper, to taste
  • Fresh basil, for garnish

Instructions

  1. Cook the penne pasta according to package instructions. Drain and set aside.

  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic and sauté until softened.

  3. Add the vodka to the skillet and cook for 2-3 minutes, allowing it to reduce slightly.

  4. Stir in the tomato sauce and heavy cream. Simmer for 5 minutes, stirring occasionally.

  5. Add the cooked penne pasta to the sauce and toss to coat. Cook for an additional 2 minutes.

  6. Stir in the grated parmesan cheese and season with salt and pepper to taste.

  7. Serve the Penne Russo à la Vodka in bowls, garnished with fresh basil.
