Ingredients

  • 8 oz spaghetti
  • 1 can (5 oz) tuna, drained
  • 2 cups cherry tomatoes, halved
  • 2 cloves garlic, minced
  • 2 tbsp capers
  • Juice of 1 lemon
  • Zest of 1 lemon
  • ¼ cup fresh parsley, chopped
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving

Instructions

  1. Cook the spaghetti according to package instructions. Drain and set aside.

  2. In a large skillet, heat some olive oil over medium heat. Add the minced garlic and cook until fragrant.

  3. Add the cherry tomatoes and cook for about 5 minutes until they start to soften.

  4. Stir in the drained tuna, capers, lemon juice, and lemon zest. Cook for another 2-3 minutes.

  5. Add the cooked spaghetti to the skillet and toss everything together until well combined.

  6. Season with salt, pepper, and chopped parsley. Cook for an additional 2-3 minutes.

  7. Serve the pasta hot with a sprinkle of grated Parmesan cheese.
