Ingredients

  • 2 cups fresh or frozen peas, thawed
  • 1 ripe avocado, pitted and peeled
  • 1 small red onion, diced
  • 1 clove of garlic, minced
  • 1 jalapeno pepper, seeds removed and minced
  • Juice of 1 lime
  • 1/4 cup fresh cilantro, chopped
  • Salt and pepper, to taste
  • Tortilla chips, for serving

Instructions

  1. In a food processor or blender, combine the peas, avocado, red onion, garlic, jalapeno, lime juice, and cilantro. Pulse until smooth and well combined.

  2. Season with salt and pepper to taste.

  3. Transfer the pea-camole to a serving dish and garnish with additional chopped cilantro.

  4. Serve with tortilla chips.
