How To Make Goat’s Cheese & Garlic Linguine with Crisp Pancetta

Ingredients
- 8 ounces linguine
- 4 ounces pancetta, diced
- 3 cloves garlic, minced
- 4 ounces goat’s cheese
- 1/4 cup grated Parmesan cheese
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
Instructions

Cook linguine according to package instructions until al dente. Drain and set aside.

In a large skillet, cook pancetta until crispy. Remove and set aside on a paper towel-lined plate.

In the same skillet, heat olive oil and sauté minced garlic until fragrant.

Add cooked linguine to the skillet and toss to coat with the garlic oil.

Crumble goat’s cheese over the linguine and stir until melted and combined.

Stir in grated Parmesan cheese and season with salt and pepper to taste.

Serve the linguine in individual bowls, topped with crispy pancetta and fresh parsley.
